Roast Salmon & Asparagus!

I've been eating this like crazy and i love it! I buy the frozen salmon filets from Costco, sprinkle with a little olive oil and the no-salt seasoning from costco to make a little herb crust. Super yummy!

I then wash, dry, and sprinkle asparagus with a little olive oil, salt and pepper.

Put them both on a cookie sheet, and bake at 415 degress for about 15-20 minutes, and done! I think I've had this three times this week. :) Emma even ate some last night. She had "pink chicken" and "green french fries". I was AMAZED that she ate it. Another positive of being healthy, Emma is eating more veggies.

On Weight Watchers only 12 points. LOVE it!

Week "whatever" Weight Watchers

I haven't done a weight update for a while, so here it is. We're still going strong. Eating good is addicting, and I just need to figure in the right amount of exercise, but still we're doing good. Shane now walks to work everyday, and Emma and I generally walk right with him. We just completed our 2 month mark and here is our current dats!

Shane: 18 lbs
Carrie: 10 lbs

Woo-hoo! It's frustrating if I look at it week by week, but if I stand back and say, ok 10 lbs every 2 months. I could be looking good by the end of summer. I'm really loving how easy weight watchers is. Lovin' it. :)

Week 5: Weight Watchers

What is it with guys and losing weight fast? Good for Shane, he's up to 16 pounds already! He's amazing. I hit 5 lbs this week, which for me is good, I just wish it was 16 pounds. We're walking all the time, eating better, and most of all, we feel great! :) Hopefully it'll turn into long-term success on the scale.

February 6th: Week 2 of Weight Watchers

So...we had a good week. I was down 3.8 pounds and Shane was down 4.7! And we even went out to Claim jumper and went to a super bowl party! I'm so happy...I've needed to lose weight for a long time, and I've never actually done it. This is the first ever successful attempt. Now only another 52 weeks to go and I might actually be at my goal weight. We've been making better food choices and walking almost everyday. It feels good to be making progress and getting healthy.

January 28th: WW--Week 1

Stupid boys! I hate how they lose weight so much faster...we both ate and exercised very similarly, and I stayed in my points...while he went over a bit, but nothing happened. Next week I'm going to rock it!

I'm way off on the 365 posts, but I figure a few here and there is better than none. :)

January 18th: My man and his tools!

I'm so grateful for Shane and how handy he is around the house. No matter what I ask... "Honey, could you...?" he always responds with, "I'm on it!". Today he's been disassembling beds and will be reassembling them shortly in their new home, and he's doing this with a positive attitude. I couldn't love him more! :) XOXOX

January 17th: Moving Day!

As we were packing things for Heather and cleaning out closets....the girls found Shane's crutches from when he hurt his knee. They became the prized toy of the afternoon, and eventually were confiscated. It was fun while it lasted. :)

January 13th-16th: SICK

Let' me sum it up...sick, coughing, sick, coughing, not sleeping...snoring...sick, coughing. We're finally on the mend.

January 12th: Sick day!

All three of us are sick, and in some ways it's really nice. Shane works evenings, so the only time we actually get to spend FHE together on Monday night is on a sick day. (We usually do it at lunch time on Mondays before he goes to work.) So tonight, we went to Deseret Book, ate Teriyaki, had some ice cream, and are now getting ready for FHE. It's so nice to spend so much time together, even though we are all a little under the weather.

January 11th: Raisins and Chocolate Chips

No picture for today, just a quick story. Today, we were running late for church, so I had Shane get Emma's snack ready for sacrament meeting, which is usually raisins. Shane did it and we ran off to church just in time. We weren't even late. After sacrament, I got Emma out her raisins to munch on, and after about 5 minutes, in a very quiet moment, Emma excitedly shouted out, "Chocolate chips!"...and Shane just started laughing. Apparently, he had hidden a few chocolate chips in her raisins. It made her so happy, and other than the outburst during a quiet moment, I thought it was really cute. I'm glad that Emma has a Dad that enjoys the small moments with her, and giving her surprises that absolutely make her little 3-year old day. :)

January 10th: Everybody was Kung Fu Fighting

Emma's favorite movie right now is, of course, Kung Fu Panda. She loves to dance around the room at the end...here are some action shots. I should get her into some dance classes. She loves to move around! :)

I LOVE the dollar spot at target. I should just try to avoid it, since I usually can't get out of there without spending many a dollar. This little snack case was the pick of this week. Emma loves it because it has the Incredibles on the front. I love it because it keeps snacks from spilling all over the couch, while I try to get my super picky eater to snack.

Emma usually doesn't throw any tantrums, Thank goodness, but she sure did today! She decided to put some cheerios on the floor, she said she "was going to line them up...". She soon got bored and didn't want to clean them up, and began to do this little face. She is generally the sweetest thing in the world, but man...when she does this, I don't know what she's thinking. She's definitely not getting any where. After a few minutes, she decided that she would pick up the cheerios instead of going to bed, and is now playing happily.

Heathers kids have been with us for a while and have introduced quite a few toys to Emma...this one I HATE! Galaxy goop or some other type of slime. They love it, and play with it every chance they get, but it makes my stomach turn just looking at it. The kind they were playing with tonight even made noises.

I made the RECKLING board at an enrichment meeting a few years ago, and the beach picture is of Emma at deception pass a couple of years ago this summer. She loved scouring the beach for rocks and I just love this picture of her in her little hat. :)

My favorite picture of Shane and I from our engagement pictures. The photo on the right was taken on the beach at La Push 4 years ago. (Pre-twilight craze!) We go camping out there every year. The left foot is Shane's and the right foot is mine. Don't you love my super flat feet?

I bought these prints from a local artist while I was visiting Chile a couple of years after my mission. They are of the city of Valparaiso...which has outdoor elevators to carry people up and down all of the steep hills of the city. I have a three print set. Again, I love them. Such great memories of that return trip. :)

So to catch up on Project 365, I took pictures of things around my house that haven't changed since the 1st. So even though its late, I'm pretending that I actually took one each day!

These is one of my favorite decorations that I have in my living room. I collected flowers from Chile on my mission in my scriptures as I was walking around. I came home with quite the collection, and framed them for safekeeping. I love them, and can even remember a bunch of the places they came from.

Project 365: The Recklings

So, I accepted a challenge from one of my old roommates, to participate in this project. You take a picture for each day of the year and then at the end of the year you have a record of the exciting and the boring...everything from the past year. I love this idea, as I look at blogging now, and my current form of journaling. I remember to blog everyday, but I barely remember to write in my journal once every couple of months.

They have a lot of ideas and links on how to do it! Some people do hard-copies and print out each picture, or do a one-week summary. I'll probably just blog all year, and then do a year-end book on my Mac at the end of the year.

I started a separate blog for this challenge here. I'll post my daily pictures there, just so they aren't so boring here on this blog. Not that this blog is that interesting. Ha! :) Anyway, does anyone else want to join?
