Favorite "Lite" recipe right now!

Roast Salmon & Asparagus!

I've been eating this like crazy and i love it! I buy the frozen salmon filets from Costco, sprinkle with a little olive oil and the no-salt seasoning from costco to make a little herb crust. Super yummy!

I then wash, dry, and sprinkle asparagus with a little olive oil, salt and pepper.

Put them both on a cookie sheet, and bake at 415 degress for about 15-20 minutes, and done! I think I've had this three times this week. :) Emma even ate some last night. She had "pink chicken" and "green french fries". I was AMAZED that she ate it. Another positive of being healthy, Emma is eating more veggies.

On Weight Watchers only 12 points. LOVE it!

Week "whatever" Weight Watchers

I haven't done a weight update for a while, so here it is. We're still going strong. Eating good is addicting, and I just need to figure in the right amount of exercise, but still we're doing good. Shane now walks to work everyday, and Emma and I generally walk right with him. We just completed our 2 month mark and here is our current dats!

Shane: 18 lbs
Carrie: 10 lbs

Woo-hoo! It's frustrating if I look at it week by week, but if I stand back and say, ok 10 lbs every 2 months. I could be looking good by the end of summer. I'm really loving how easy weight watchers is. Lovin' it. :)

Week 5: Weight Watchers

Shane: 16 lbs
Carrie: 5

What is it with guys and losing weight fast? Good for Shane, he's up to 16 pounds already! He's amazing. I hit 5 lbs this week, which for me is good, I just wish it was 16 pounds. We're walking all the time, eating better, and most of all, we feel great! :) Hopefully it'll turn into long-term success on the scale.

February 6th: Week 2 of Weight Watchers

So...we had a good week. I was down 3.8 pounds and Shane was down 4.7! And we even went out to Claim jumper and went to a super bowl party! I'm so happy...I've needed to lose weight for a long time, and I've never actually done it. This is the first ever successful attempt. Now only another 52 weeks to go and I might actually be at my goal weight. We've been making better food choices and walking almost everyday. It feels good to be making progress and getting healthy.

January 28th: WW--Week 1

Carrie: +.8
Shane: -2.8

Stupid boys! I hate how they lose weight so much faster...we both ate and exercised very similarly, and I stayed in my points...while he went over a bit, but nothing happened. Next week I'm going to rock it!

I'm way off on the 365 posts, but I figure a few here and there is better than none. :)

January 18th: My man and his tools!



I'm so grateful for Shane and how handy he is around the house. No matter what I ask... "Honey, could you...?" he always responds with, "I'm on it!". Today he's been disassembling beds and will be reassembling them shortly in their new home, and he's doing this with a positive attitude. I couldn't love him more! :) XOXOX

January 17th: Moving Day!


As we were packing things for Heather and cleaning out closets....the girls found Shane's crutches from when he hurt his knee. They became the prized toy of the afternoon, and eventually were confiscated. It was fun while it lasted. :)
